Cauliflower Mac & Cheese Patties 


 



      If you are looking for a gluten free side dish or you can make this as a casserole and add chicken or ham in it. This then is a dish for you. I have met many people who for one reason or another choose to be gluten-free. I decided to share a recipe that I put my own twist on so that it could be made two different ways. The photos show you one of the ways to serve this recipe as a side dish. but you could serve this alongside of a beautiful salad or make it as a main meal without meat, especially if you are on who doesn't eat meat.

    The recipe for this is incredibly easy and can be altered in a multitude of ways. So, with that said here is how you would make these cute scrumptious patties.


Cauliflower Mac & Cheese Patties

Yield's approximately 8 to 10 patties

-One head of cauliflower grated Approximately 1 pound +
-A mix of your favorite cheeses I used Monterey Jack Cheese, Parmesan Cheese, and Shredded Cheddar 1/2 cup each
-1 tsp Onion Powder
-1 tsp Garlic Powder
-1 tsp salt and pepper each to taste
-1 Egg
-1 tbsp of Sour Cream
-1/2 to 3/4 cups of Gluten-free Breadcrumbs

Take a medium size head of Cauliflower Approximately 1 pound and grate with cheese grater to make your Cauliflower Rice. Using bagged premade cauliflower rice is fine however after you cook it as directed you need to squeeze as much water out as possible.  Having it too wet will keep it from being crispy. If using freshly grated cauliflower rice you do not need to cook first.
Place rice in a bowl, add all of the ingredients together. making sure you mixture is sticky and can be made into patties. The amount of breadcrumbs can sometimes vary as each head of cauliflower isn't identical in size.
-Form your patties and place on a lined cookie sheet. Spray to prevent sticking.  Bake for 35 to 40 minutes @ 350 degrees until golden brown. you should flip about halfway in the cooking process.  

-You also can air fry in an air fryer at 425 degrees for 10 to 12 mins flipping halfway through until golden brown.
 
-If you choose to pre-make and freeze ahead of time so that you can take out the desired amount for your meal.  Air fry at 425 degrees for approximately 25 minutes flipping halfway through or bake at 350 degrees for 35 to 40 mins. flipping halfway through.  Spray the foil or paper to prevent any sticking and for easy flipping and removal.  Making sure that there is a nice crispy outer crust. 

-When making into a casserole omit the gluten free breadcrumbs and use as a crispy topping. You can add chicken or ham to this if you want to add more protein to your dish. Bake at 350 degrees for 35 to 40 mins until golden brown.
