Lemon Chicken Orzo Soup
This soup is warm cozy and believe
it or not very hearty. On a cold raw or snowy day this delicious soup will warm
you up in the best way.
Yields
approximately 6 quarts
Ingredients:
2
large chicken breasts seasoned and grilled with your favorite seasoning. I use
salt, pepper and garlic powder. Grill, cool and cut into bite size chunks. set
aside.
4
good size carrots cut into 1/2" slices
The
zest of 2 lemons and the juice of one lemon
1
medium size onion diced into small pieces
1
clove of fresh garlic minced

=1/2 cups of all-natural chicken broth
4
cups of water
1/2
cup orzo pasta
In
an 8-quart soup pan Take your diced onion, garlic and sliced carrots and cook
down until carrots are just fork tender. Add your chicken, stir and add broth
then your water. Then add the zest of 2 lemons and the juice of one lemon.
Simmer for approximately one hour on low heat. Take the amount of soul you want
to serve and add your orzo. reserve remaining soup. I do this because the pasta
will absorb your liquid as you store and then you have to keep adding water
making the broth not as tasty.
Garnish with a Sprague of Rosemary and crusty bread.
